Vegan Pumpkin French Toast Recipe

Only 7 ingredients Making vegan pumpkin French toast is easy. The best way to start the day is pumpkin spiced, lightly crisp, and tender!

━━━━━━━━━━━━━

– ½ cup + 2 tablespoons plant-based milk, (such as oat or soy) – 1 ½ tablespoons cornstarch – ½ cup pumpkin pureé, (cooked and pureéd pumpkin, I use canned) (not pumpkin pie filling) – 2 tablespoons maple syrup, (plus more for serving) – 1 teaspoon pumpkin pie spice – 1 teaspoon vanilla extract – light oil, (such as canola or vegetable) for frying – 6 slices day-old bread, (gluten-free if preferred)

INSTRUCTIONS

INSTRUCTIONS

Dissolve cornstarch in plant-based milk in a wide medium bowl. Mix in pumpkin pureé, maple syrup, pumpkin pie spice, and vanilla.

━━━━━━━━━━━━━

Step 1

Slightly oil a large non-stick pan. Dip a slice of bread into the pumpkin mixture and coat both sides, shaking off excess, when the pan is hot.

━━━━━━━━━━━━━

Step 2

You can quickly dip both sides of the bread in the pumpkin mixture without making it soggy.

━━━━━━━━━━━━━

Step 3

Cook bread in a hot pan for 3–5 minutes per side until golden brown. Cook French toast slowly to crisp the outside and cook the middle.

━━━━━━━━━━━━━

Step 4

You may need to work in batches depending on your pan size. Serve hot with maple syrup, vegan butter, coconut whipped cream, and extra pumpkin pie spice.
