– 1 small ripe banana, (3oz/ 85g when peeled) – ½ cup oats, old fashioned, 1-minute oats, or instant (gluten-free if preferred) – ⅓ cup plant-based milk, (such as oat or soy) – 1 tablespoon maple syrup, (or sweetener of choice) – ¼ teaspoon baking soda – ¼ teaspoon ground cinnamon – ¼ teaspoon vanilla extract – 1 tablespoon vegan chocolate chips, (add more to taste)

Pre-heat your oven to 350℉ (180℃). Blend banana, oats, plant-based milk, maple syrup, baking soda, cinnamon, and vanilla extract until smooth.

Step 1

Use a 10oz/ 284g ramekin or other oven-safe baking dish. Top with chocolate chips. Bake for 25 minutes until a toothpick inserted into the center comes out clean.

The uncooked batter can be refrigerated in an airtight container overnight and baked fresh in the morning. The banana may darken the batter.
