Tofu Scramble Recipe

This hearty vegan breakfast recipe is my favorite. Savoury brunch with peppers, beans, onions, and mushrooms perfectly spiced.

– 2 tablespoons nutritional yeast – 1 teaspoon chili powder – 1 teaspoon ground cumin – 1 teaspoon black salt, (also called kala namak) or regular salt – ¾ teaspoons turmeric – ¼ teaspoon garlic powder For the tofu scramble: – 1 tablespoon oil – 8 oz button mushrooms, sliced (about 1 ½ cups sliced) – 1 red pepper,, chopped – ½ yellow onion, chopped – 2 cloves garlic,, minced – 1 454g block medium-firm tofu or firm tofu OR 2 349g blocks extra firm silken tofu – 1 19oz can black beans (2 cups),, drained and rinsed

INSTRUCTIONS

Stir together all spice mix ingredients in a bowl. Add olive oil to a large skillet over medium-high heat.

Step 1

Add mushrooms, pepper, onion, and garlic to hot pan and sauté for 8 minutes until just browning.

Step 2

Tofu blocks should be broken up with a spoon to make a chunky scramble. Add black beans and spice mixture. Keep heating for 5–8 minutes.
