Strawberry Cookies Recipe

Strawberry cookies that are chewy and taste great! The brown sugar cookie dough and bread flour make these cookies very chewy.

– 226 g or 1 cup unsalted butter – 200 g or 1 cups granulated sugar – 70 g or ⅓ cup brown sugar light not dark – Zest of 2 lemon – 1 tsp pure vanilla extract – ¾ tsp baking soda – ½ tsp fine sea salt – 1 tsp lemon juice freshly squeezed – 1 large egg – 300 g or 2 ⅓ cups bread flour – 35 g freeze dried strawberrie

INSTRUCTION

Microwave butter in a heatproof bowl for a minute to partially melt. Add sugar, stir, and microwave the bowl for 30-60 seconds to melt the butter.

STEP  1 .

Whisk sugar and butter for 2 minutes, then add lemon zest, vanilla, baking soda, and salt. Whisk well. Add the egg and whisk for 1 minute until smooth and shiny.

STEP 2.

Powder the dried berries in a food processor or blender. Mix bread flour, lemon juice, and freeze-dried berry powder in the bowl with a rubber spatula until no flour bits remain.

STEP 3.

Put the bowl in the fridge for at least 2 hours or overnight without covering it. Heat the oven to 350 F. Use parchment on two cookie sheets.

STEP 4.

Divide the dough into 2 tablespoons per cookie with a cookie scoop. Cookies spread, so leave two inches between dough balls.

STEP 5.

Leave cookies bare for glazing. Otherwise, coat the cookie dough ball face-down in granulated sugar.

STEP 6.

Bake cookies for 10-12 minutes until sides are golden. To make a glaze, mix 1 ½ cups powdered sugar

STEP 7.

With 2-3 tablespoons of lime juice or strawberry puree after the cookies are completely cooled. Cover cookie centers with spoon.
