Slow Cooker Steak Chili Recipe

Two types of beans, smokey herbs, vegetables, and delicate steak make this Slow Cooker Steak Chili hearty. The large quantity is great for game day or freezer!

INGREDIENT

– 1 Tablespoon olive oil – 2 lbs. sirloin steak, excess fat trimmed and remainder cut into cube – 1 large yellow onion, chopped – 1 green pepper, chopped – 1 28 ounce can diced tomatoes, undrained – 1 28 ounce can tomato sauce – 1 4 ounce can green chilie – 1 15 ounce can kidney beans, rinsed and drained – 1 15 ounce can black beans, rinsed and drained – 2 teaspoons chili powder – 1 teaspoon cumin – 1/2 teaspoon smoked paprika – 1/2 teaspoon cayenne pepper – 1 teaspoon oregano – 4 cloves garlic – Pinch sugar – Salt and pepper – Sour cream, cheese, and Fritos, for serving

INSTRUCTION

Pre-heat the slow cooker on high while prepping the remaining ingredients. Cook oil in a large skillet over medium-high. Season sirloin with salt and pepper, then cook in oil without stirring for several minutes.

Step 1

 Turn and brown sides. Put meat in slow cooker and heat skillet on low. One can diced tomato juice or 1/4 cup water deglazes the pan. Scrape brown particles from hot pan liquid with a spatula.

Step 2

Use slow cooker. Stir all ingredients except serving items into the slow cooker. Best to cook on low for 8 hours or high for 4. Choose sour cream, cheese, Fritos, or cornmeal.
