Slovenian Jam Filled Rolls Recipe

Sweet rolls that are fluffy and full of jam! It's great for breakfast and the holidays. It can be made ahead of time and frozen.

INGREDIENTS 

For the dough – 1 cup full fat milk – 2 teaspoons instant or active dry yeast – 3 2/3 cups all purpose flour plus more for kneading – 1/4 cup granulated sugar – 3 tablespoons unsalted butter melted – 2 large eggs whisked – 1 teaspoon fine sea salt – 1 teaspoon lemon zest – 1 tablespoon dark rum vegetable oil for greasing the bowl For the roll – 3 tablespoons unsalted butter melted – 1 cup jam of your choice I use rosehip Extra butter for greasing the pan powdered sugar for serving (optional)

Step 1

Make dough: Warm milk in a heatproof bowl on the stove or in the microwave until warm but not hot. Put yeast in gently and let it dissolve.

Step 2

Put flour in your stand mixer or a large bowl for hand-mixing. Add yeast, sugar, melted butter, whisked eggs, salt, lemon zest, and rum to milk.   

Step 3

Mix the ingredients on low speed with a dough hook or wooden spoon until the dough forms.  

Step 4

Knead the dough for 5 minutes until it forms a ball and pulls away from the bowl. If it's too sticky and doesn't lump, add flour tablespoon by tablespoon.  

Step 5

Place dough in a large, lightly greased bowl. Cover with a kitchen towel and let proof in a draft-free location for 1–1.5 hours to double in size.  

Step 6

Make rolls: Roll the dough into a 12x16-inch rectangle on a lightly floured surface, about 1/2 inch (1 cm) thick. Cut into 12 squares.  

Step 7

Center each square with a spoonful of jam. Lift and pinch the opposing ends like a package to close all the openings and keep the jam within. Mold them into balls gently.  

Step 8

Place pinched side down rolls in a buttered 9x13 inch (23 x 33 cm) baking tray. Cover with a kitchen towel and proof for 30 minutes. Heat the oven to 350°F (175°C).  

Step 9

Before baking, gently brush rolls with melted butter (save leftover butter). Bake in the center of the oven for 25–30 minutes until the tops are brown and the rolls sound hollow.  

Step 10

Brush remaining melted butter on hot rolls. Serve rolls warm or room temperature—not hot—as jam can burn. Add powdered sugar if desired.
