Simple Radicchio Pizza With Egg Recipe

Make this tasty and quick radicchio pizza to brighten your day. Recipe yields one 12.5 x 14-inch (32x35-cm) pizza or three 10-inch (26-cm) round pizzas.  


– 1 batch easy pizza dough use half recipe for smaller portion – 1 jar tomato sauce you can use store-bought – 1/2-1 tablespoon dried oregano – 400 g 14oz aged (low moisture) mozzarella cheese, grated – 1 large head radicchio or 3 tiny ones, cored, outer leaves removed and thinly sliced into strip – 3 eggs optional + sunflower oil for greasing the pan

Step 1

Heat oven to 200°C (392°F) and oil a baking sheet. Grease many pans for smaller pizzas.  


Step 2

Prepare my dough recipe through step 5. Before rising, divide it into 3 pieces. Follow package instructions for store-bought.  

Step 3

Press down on risen dough to deflate. Roll each piece on a lightly floured surface. Transfer each to an oiled pan.   

Step 4

Sprinkle dry oregano generously over all the pizzas after spreading tomato sauce. Top with cheese. Finish with chopped radicchio.  

Step 5

Bake each pizza for 10-15 minutes until the edge is golden, the cheese is melted, and the radicchio is scorched and wilted.  

Step 6

Pizza with an egg on top should be removed from the oven after 5-7 minutes, when the cheese is partially melted.   

Step 7

Crack an egg in the middle and bake for 7 minutes until the egg white is cooked and turns white, the cheese is melted, the radicchio wilted, and the crust golden. Serve immediately with spicy sauce or black pepper.
