Pineapple Pound Cake Recipe 

Pineapple-glazed pound cake. The oven does not need to be preheated for this cake.

– ½ cup shortening – 1 cup butter – 1 ¾ cups white sugar – 6 egg – 3 cups sifted all-purpose flour – 1 teaspoon baking powder – ¼ cup milk – 1 teaspoon vanilla extract – ¾ cup crushed pineapple with juice – ¼ cup butter – 1 ½ cups confectioners' sugar – 1 cup crushed pineapple, drained

Grease and flour a 10-inch tube pan. Sift flour, baking powder. Set aside. In a large bowl, beat shortening, 1 cup butter, and sugar until fluffy.

Step 1

Beat well after adding each egg, then add vanilla. Flour and milk can be mixed. Add 3/4 cup crushed pineapple.

Step 2

Fill 10-inch tube pan. Put in cold oven. Bake 90 minutes at 325 degrees F (175 degrees C) until top springs back.  Wait 10 minutes after oven-removing. Take from pan gently.

Step 3

Make the glaze by mixing 1/4 cup butter, confectioners sugar, and 1 cup crushed pineapple in a small saucepan. heat and stir melt. Pour over baked cake immediately.
