Overnight Cinnamon Rolls Recipe

Sugar-filled, fluffy, and chewy Overnight Cinnamon Rolls could become your new favorite thing to do on Christmas morning.

INGREDIENT

For the rolls: – 2 packages fast rise instant yeast – 3/4 cup warm water (aim for 105 to 115 degrees) – 2 Tablespoons sugar – 2 cups whole milk – 8 Tablespoons (1 stick) butter – 4 eggs, beaten – 1 teaspoon salt – 1/2 cup sugar – 9 cups bread flour, plus more for sprinkling For the filling: – 1 cup brown sugar – 1/2 cup white sugar – 3/4 cup (1 1/2 sticks, 12 Tablespoons) unsalted butter, at room temperature – 3 1/2 Tablespoons cinnamon For the frosting: – 1/2 cup (1 stick, 8 tablespoons) butter, at room temperature – 12 ounces cream cheese, at room temperature – 2 1/2 cups powdered sugar – Splash heavy cream – 2 teaspoons vanilla – 1/2 teaspoon salt

INSTRUCTION

Add water, sugar, and yeast to an electric mixer dish. Allow the milk mixture to settle for 10-15 minutes. Heavy frothing please. If it doesn't foam, the yeast may be bad; start over.

Step 1

Butter with milk below boiling. Mix heat and cold. Add yeast to beaten eggs. Whisk cooled milk into yeast slowly. Add the remaining 1/2 cup sugar and salt.

Step 2

Mix half the flour in the basin. Use dough hook to mix remaining 8 cups flour. The dough should be soft and springy after 6 minutes of dough hook pressing. One cup of flour aids sticky dough.

Step 3

Sticky dough, not fingers. Let the dough double in an oiled basin with loose saran wrap for 40–60 minutes. Punch dough, flour. Roll or press dough into a 12-by-24-inch rectangle.

Step 4

Pour melted butter evenly. Mix sugars and cinnamon in a small bowl and sprinkle on top. Make two 12x12 squares from half the rectangle.

Step 5

Roll each square into a tight log and cut it into 12 slices with dental floss, or use a pizza cutter to cut the rectangle into 24 long strips and roll each strip into a slice.

Step 6

Cut the buns and place 8–6 in a prepared 9x13 pan or 9-inch pie dish. Wrap rolls loosely in saran. Put rolls in fridge 8-12 hours. Morning, remove rolls and let rise in warm area till puffy, 30–45 minutes.

Step 7

Preheat oven to 350. Rolls should be firm and golden after 20 minutes. Soften rolls under baking.

Step 8

Mix butter and cream cheese digitally. Batter quickly until smooth. Mix powdered sugar, cream, vanilla, and salt. Frost rolls swiftly in warm weather. Reheat unfrosted rolls before serving.
