Mickey Mouse Egg Omelets Recipe

After growing up with Mickey Mouse and the Disney crew, I couldn't picture living without them. I knew what recipe to post when Courtney offered me to guest post on her blog at this wonderful time with her infant. 

INGREDIENT

– 1 tablespoon vegetable oil – 1/2 onion, chopped – 1/2 green bell pepper, chopped – 1/2 small tomato, chopped – 4 eggs, lightly beaten – 2 teaspoons white sugar (optional) – 1/3 cup sharp cheddar cheese – Salt and pepper, to taste

INSTRUCTION

Heat waffle iron. Oil in a pan over medium heat, then onion and bell pepper. Sauté for a few minutes, then add tomato and simmer until soft and gently browned. Stop cooking.

Step 1

Add sugar (if using) to softly beaten eggs, then pour half into the waffle iron (or until it's barely filled, like waffle batter). Sprinkle with sauteed onions, bell peppers, and tomatoes (about half, adjust as required).

Step 2

Add half the cheese and salt & pepper to taste. Close waffle iron lid and heat until light shows omelette is done. Remove the omelette and enjoy!
