INGREDIENT

– 1 1/2 cups all-purpose flour – 1/2 cup cornstarch – 1 teaspoon baking powder – 1/2 teaspoon baking soda – 1 teaspoon salt – 2 cups buttermilk – 2/3 cup vegetable oil – 2 egg – 3 teaspoons sugar – 1 1/2 teaspoons vanilla extract – 1 vanilla bean, split with seeds scraped out For the compote: – 2 lbs. sweet cherries, pitted – 3 Tablespoons maple syrup – 2 teaspoons cornstarch – Pinch salt

INSTRUCTION

Whisk flour, cornstarch, baking powder, soda, and salt for waffles. Mix buttermilk oil, eggs, sugar, vanilla, and bean scrapings. Take 30 minutes to relax.

Heat your waffle iron. Max setting makes crispy waffles. Start with a 250-degree oven. Cook 2/3 cup batter in waffle iron until done.
