INGREDIENT
– 4 pieces of bread (any bread, as long as it's large enough to cut a hole in the center, will work. I love sourdough or a hearty wheat)– 4 egg– 5 Tablespoons butter– Salt– Pepper– Fresh chopped herbs (optional)– Shredded cheddar cheese (optional)

INSTRUCTION
Spread butter on both sides of each slice of bread, saving 1 tablespoon for later. Cut a circle in the middle of each slice of bread with a cookie cutter or juice glass bottom.

Step 1
Place two bread slices and their cutouts in a pan over medium heat. Grill till browned, flip. Insert a little dollop of saved butter into each hole.

Step 2
Crack an egg in the center and heat for 3–4 minutes until set. To solidify the whites but keep the yolks runny, flip and cook for 2-3 more minutes.

Step 3
From skillet to plate with cutouts. Add salt, pepper, fresh herbs like parsley or basil, and cheese to taste. Repeat with remaining eggs and toast. Serve hot.
