Everything Bagel Eggs Benedict Recipe

This unique twist on brunch favorites Everything Bagel Eggs Benedict starts with a seasoned bagel!

INGREDIENT

– 1 recipe hollandaise sauce – 2 everything bagels, halved – 4 slices country ham – 1 avocado, sliced (optional) – 4 egg – Everything bagel seasoning, for serving – Fresh chives, for serving

INSTRUCTION

Start with hollandaise. While making the benedict, heat a bowl or pitcher in a large dish of very hot water. Heat skillet medium. Turn ham once to brown both sides.

Step 1

Cover platter to keep heated. Poach eggs. Cook for 2-3 on the stove or microwave for a crowd. Use a microwave-safe rounded mug or dish. Add 1/2 cup water.

Step 2

Crack one egg into the bowl gently. Add water to submerge the egg. Microwave 45–55 seconds to set egg white but soften center. Slot and drain with paper towels before serving.

Step 3

Toast bagels and fry eggs. Add ham, avocado, and a poached egg to each bagel half. Spread hollandaise. Add chives and Everything Bagel Seasoning. Serve now.
