Easy Italian lentil Soup Recipe

– 1 cup lentil – 1 ⅓ quarts water, divided – ⅔ cup uncooked long grain white rice – 1 tablespoon vegetable oil – 1 pound ground beef – 1 egg, lightly beaten – 2 cloves garlic, minced – 1 tablespoon grated Parmesan cheese – 1 tablespoon chopped fresh parsley – 3 tablespoons Italian bread crumb – salt, to taste – ground black pepper, to taste – 1 quart tomato sauce – ¼ cup grated Parmesan cheese for topping

A pot with 3 cups water holds lentils. Once boiling, reduce heat to low and cook 20 minutes until tender. Drain and set aside.

Step 1

Let rice and 1 1/3 cup water boil in a pot. Lower heat, cover, and simmer 20 minutes.

Step 2

Cook oil in a skillet on medium. Mix ground beef, beaten egg, garlic, 1 tablespoon Parmesan cheese, parsley, bread crumbs, salt, and pepper in a bowl.

Step 3

Make 1-inch ground beef balls. Fry meatballs in skillet for 5 minutes until evenly browned.

Step 4

Boil tomato sauce and 4 cups water in a large pot. Add browned meatballs to pot.

Step 5

Add cooked lentils and rice. Return to boil, lower heat to medium-low, and simmer 30 minutes. Add remaining Parmesan to serve.
