Croissant Cinnamon Rolls Recipe

A croissant-cinnamon roll hybrid with flaky buttery croissant layers instead of plush bread rolls. 

Butter block – 113g or ½ cup g butter softened slightly Dough – 240g or 1 cup milk – 40g or ⅓ cup all purpose flour – 7g or 1 packet instant yeast – 60g or ¼ cup warm water – 500g or 4 cups all purpose flour – 105g or ½ cup granulated sugar – 2 large egg – 60g or ¼ cup canola or flavorless oil – ½ tsp fine sea salt Filling – 113g or ½ cup butter – 210g or 1 cup brown sugar – 1 tablespoon ground cinnamon Glaze – 1 ¼ cups powdered sugar – 2 teaspoons pure vanilla paste or extract – Pinch fine sea salt – 2-3 tablespoons milk

In a pot, mix milk and ⅛ cup flour. Mixing thickens. Reservé. Ingredients: water, yeast, sugar. Three-minute foaming. Biscuit dish. Balls should form after 5-7 minutes of medium mixing. 2h oil bowl rise.

STEP  1 .

Butter should be spread thinly between two parchment paper sheets, about 9x12”. Let it chill in the fridge for 20 minutes before folding.

STEP 2.

On floured surface, flatten dough into 13x18-inch rectangle. Place butter 1/2 inch from dough. It must be removed from parchment. Evenly layer with your fingers.

STEP 3.

Close by folding dough in half. Finger-seal butter. Letter-fold it with the bottom third over the middle. Centre-top. Fold dough to close a book. Refrigerate 30 minutes in plastic.

STEP 4.

Repeat the dough roll into a large, thin rectangle. Short side over middle (vertical letter). Another side. Folding bottom-up makes square. Refrigerate 45 minutes plastic-wrapped.

STEP 5.

Brown butter, cinnamon, sugar. Whip. Tea towel-rest tough dough for 10-15 minutes or roll it into a large rectangle. Finger-tap it like pizza dough. Butter a 9x13 pan.

STEP 6.

Rolled/filled dough. Rounds of 1" unwaxed floss. Plasti-chilled 12h. Remove the pan from the fridge in the morning and wait 30 minutes. HEAT oven to 350. 40-minute deep-gold rolls.

STEP 7.

First, combine all of the ingredients by whisking them together, and then spoon them onto the rolls.
