Croissant Breakfast Sandwiches Recipe

Ham, cheese, and creamy scrambled eggs fill these croissant breakfast sandwiches, making them gooey, melty, and crunchy!

INGREDIENT

For the sandwiches: – 8 large egg – 1/4 cup milk – 1 Tablespoon butter – 1/4 cup shredded cheddar – Salt and pepper, to taste – 6 thick slices ham (or 12 thin deli slices) – 6 thick slices Swiss cheese – 6 croissant For the sauce: – 1/4 cup mayonnaise – 2 teaspoons whole grain mustard – 2 teaspoons honey – 1/4 teaspoon onion powder – Pepper, to taste

INSTRUCTION

Preheat oven to 350. Mix eggs and milk in a medium bowl. Heating a non-stick skillet on medium-low. Melt butter and add egg mixture. Stir eggs with a spatula until curds form.

Step 1

Remove eggs from heat when curds are soft but wet. Sprinkle cheese. Mix. Salt & pepper to taste. Whisk all ingredients and put aside to make the sauce.

Step 2

Place ham, cheese, and egg mixture on croissant bottoms to make sandwiches. Top sandwich with sauce.

Step 3

Cheese on a baking sheet should be melted and gooey after 8–10 minutes. Serve warm.
