Cranberry Turkey Biscuit Sandwich with Bacon and Fried Egg Recipe

These gigantic Turkey, Bacon, and Egg Breakfast Sandwiches with Cranberry Mayo make Thanksgiving leftovers shine.

– 8 strips bacon – ½ cup whole berry cranberry sauce – ¼ cup mayonnaise – Squeeze lemon juice – 4 egg – 8 slices turkey (leftover shreds or turkey pieces work great too!) – 4 slices monterey jack cheese (a garlic and herb variety is especially good) – 4 leftover rolls, biscuits, or bread

Crisp bacon in a skillet. Transfer to a paper towel-lined plate and reserve bacon grease. Mix cranberry sauce, mayo, and lemon juice in a small bowl. Salt & pepper to taste.

Step 1

Half buns or biscuits and spread cranberry mayo. Add turkey, cheese, and bacon to a biscuit or roll and top. Heat the turkey and cheese in the microwave or pan before adding them to the sandwiches.

Step 2

Cook eggs until set on bottom in bacon oil over medium heat. Flipping and frying over-easy, dippy eggs takes 30–60 seconds. Give each sandwich one egg.
