Caramel S’mores Bars aka OMG Bars Recipe

Graham Layer – 1 ½ cups or 190g cups graham cracker crumb – ⅓ cup or 80g butter unsalted Caramel Layer – 1 cup or 200g sugar – ¼ cup heavy cream – ½ cup or or 113g butter can use salted here reduce fine sea salt to 1/4 tsp – 1/2 teaspoons fine sea salt – 1 teaspoon pure vanilla extract Marshmallow – 2 envelopes or 17g powdered gelatin – ⅓ cup or 85g cool water for the gelatin mixture – 1 vanilla bean or 2 teaspoons pure vanilla extract – ⅓ cup or 88g cup water for the sugar – ¼ cup plus 1 tablespoon or 95g g honey – 226g or heaped 1 cup brown sugar – ¾ tsp fine sea salt – 100 g dark chocolate chopped fine

INSTRUCTION

Put parchment paper over the edges of an 8- or 9-inch square pan that has been greased on both sides. Warm the oven up to 350 F.

STEP  1 .

Melt butter and blend crackers. Mix to wet sand. Add more melted butter if dry. Press the mixture into the pan evenly. After 10 minutes, cool before making caramel.

STEP 2.

Sugar-long-pot. Add a few drops of lemon juice to sugar with a wooden spoon. Mediate heat. Heavy microwave cream, 30 seconds. Leave ingredients after caramel forms.

STEP 3.

Melting sugar gets darker, so mix often. Minute after liquid/amber. Introduce heavy cream slowly. Prevent caramel bubbles. Cream butter, salt, and low heat. Heat-infused vanilla. caramelize graham.

STEP 4.

In a small bowl, mix cool water and vanilla scrapings. Combine gelatin. Save. Sugar, water, salt, honey, and scraped vanilla bean in a deep pot. Over medium heat, mix.

STEP 5.

A mix thermometer in the pan should read 245-250 F. Remove vanilla bean and pour into stand mixer bowl bottom. Cool for a minute and whisk in gelatin. Low, medium, whip.

STEP 6.

Microwave chocolate slowly until almost melted, then stir until smooth. Slightly cool. Whipped marshmallow fluff should be thick and shiny after 10 minutes.

STEP 7.

Stroke the cooled, melted chocolate twice with force. Gently cover caramel with marshmallow. Leave bars 4 hours to harden. Dry and heat a slicing knife. Bars should chill. Room-temperature slices are best.
