Best Vegan Sandwich Bread Recipe

– ½ cup plant-based milk, (such as oat or soy) – ½ cup water – 2 tablespoons white sugar – 2 ¼ teaspoons instant yeast, (one packet) – 3 cups all-purpose flour – ¼ cup vegan butter, melted – 1 ¼ teaspoons salt

Activate the yeast:  Plant-based milk and water in the microwave for 60 seconds warms like bath water. A thermometer reads 110F.

Step 1

Whisk sugar and yeast into warm milk/water in a large bowl. Let sit 5–10 minutes under a clean dish towel. Resting should foam it; continue.

Make the dough: Mix flour, melted vegan butter, and salt into yeast mixture for shaggy dough. Knead the dough for 5–6 minutes on a clean surface until smooth and elastic.

I prefer hand-kneading, but a stand mixer with a dough hook or bread machine works too.

Step 4

1st rise:  Use oil or vegan butter to coat a large clean mixing bowl. Drop the dough ball into the oil and turn several times.

In a warm place, let rise for 1 hour under a clean dish towel. The oven works well with the light on.

Shape the loaf:  Risen dough should double in size. Dough punchdown. After lightly flouring a clean surface, roll and stretch the dough into an 8" x 15" rectangle.

To swirl the bread, roll the dough into a log from the shorter side of the rectangle. Roll the dough and place in a lightly greased 4" x 8" loaf pan. There may be space around the dough as it expands into the pan.

2nd rice: Cover with a clean dish towel and rise in a warm place for 1 hour.

Bake the bread:  When the dough rises again, preheat the oven to 350F (180C).

Without the dishtowel, bake the dough in the loaf pan for 30–35 minutes until dark golden brown. Remove it carefully from the pan and cool on a rack.
