Activate the yeast: Plant-based milk and water in the microwave for 60 seconds warms like bath water. A thermometer reads 110F.

Whisk sugar and yeast into warm milk/water in a large bowl. Let sit 5–10 minutes under a clean dish towel. Resting should foam it; continue.

Make the dough: Mix flour, melted vegan butter, and salt into yeast mixture for shaggy dough. Knead the dough for 5–6 minutes on a clean surface until smooth and elastic.

I prefer hand-kneading, but a stand mixer with a dough hook or bread machine works too.

1st rise: Use oil or vegan butter to coat a large clean mixing bowl. Drop the dough ball into the oil and turn several times.

In a warm place, let rise for 1 hour under a clean dish towel. The oven works well with the light on.

Shape the loaf: Risen dough should double in size. Dough punchdown. After lightly flouring a clean surface, roll and stretch the dough into an 8" x 15" rectangle.
