Berry Frozen Yogurt Bites with Honey Granola Recipe

Freeze your fruit-yogurt parfait! Granola, fruit, and yogurt bites are a refreshing, creamy treat on a hot day.

– 2 cups Greek yogurt (I use whole milk yogurt) – 1/4-1/2 cup milk – 3 Tablespoons honey For the jam: – 2 cups mixed berries (I used a frozen mix) – 1/4 cup honey For the granola: – 2 cups old fashioned rolled oats (certified gluten free if needed) – 3/4 cup chopped nuts of your choice – 3 Tablespoons coconut oil, melted – 3 Tablespoons honey – 1 teaspoon vanilla extract – 1/2 teaspoon cinnamon – Pinch salt

Preheat oven to 350. Mix oats, almonds, cinnamon, and salt in a bowl. Mix in oil, honey, and vanilla. Mixture on baking sheet. Stir after 10 mins of baking.

Step 1

Keep baking granola for 7-10 minutes until brown. After baking, scrape and cool the pan on the sheet.

Step 2

Make jam. A pot with honey and berries. Make jam by simmering berries 8–10 minutes. Cool overnight or at room temp.

Step 3

Take bites: Mix greek yogurt, milk, and honey in a bowl until pourable but not runny. Mix or gently fold jam into yogurt to swirl.

Step 4

Line 2 small muffin tins with 24 foil or paper liners. Pinched each bottom with granola. Nearly fill each cup with yogurt.

Step 5

Add more granola. Frost three hours or overnight in saran wrap. These taste best 10 minutes after freezing.
