For a simple food in the morning, this Banana Pancake Recipe is great.
INGREDIENT
– 1¼ cups all purpose flour– 2 Tablespoons sugar– ½ teaspoon salt– 1 teaspoon baking soda– 1 teaspoon baking powder– 1 egg, separated– 4 Tablespoons butter, melted and cooled– 1 cup buttermilk– ¼ cup milk– 2 ripe bananas, sliced in 1/2 inch round– 1/2 cup chopped pecan– Peanut Butter and/or Biscoff and Maple Syrup for serving– Butter, for the skillet

INSTRUCTION
Toast pecans in a dry skillet over medium heat for 2-3 minutes until aromatic. Set aside. Mix flour, sugar, salt, soda, and baking powder in a medium bowl.

In another bowl, mix egg yolk, butter, buttermilk, and milk. Add yolk mixture to dry ingredients and stir slightly. Egg white batter should be thick and lumpy.

Stop before batter smooths! Possible unintegrated egg white. No problem! We enjoy pancake batter lumps and bumps. Preheat a griddle or grill pan to medium. Heat butter in pan.

Place 4-5 banana slices in a circle on the griddle for each pancake. Pour batter on pancakes. Make bouncy pancakes. Flip pancake after bubbles develop and brown for 2-3 minutes.

Certain bananas twist when flipped. No worries—it'll taste great! Serve pancakes with peanut butter or biscoff, toasted pecans, and maple syrup immediately or bake them in a single layer at 200 degrees.
