Avocado Crema Halloumi Sandwich Recipe

A better, meatless version of the classic BLT. A tasty, juicy sandwich that is very simple to make.  

INGREDIENTS 

Avocado crema – 2 ripe avocados skin and pit removed juice from 1/2 lime – 1/4 teaspoon sea salt more to taste – 1/4 teaspoon ground cumin more to taste – 1/2 teaspoon garlic powder – 60 g 1/4 cup Greek yogurt (full fat preferable) – 60 g 1/4 cup sour cream Sandwich – 1-2 tablespoons oil I use sunflower, but olive is fine too – 250 g 9 oz Halloumi cheese – 100 g 3.5 oz / small loaf Ciabatta bread handful of baby spinach large heirloom tomato sliced small bunch of fresh basil

Step 1

First make the avocado crema Mix everything in a food processor or bowl with an immersion blender. Combine items and blend on medium speed until smooth.

Step 2

Try adding salt, lime juice, or cumin by taste. Keep avocado crema in a container covered while making the remainder.  

Step 3

Put oil in a non-stick pan over medium-high heat. Slice halloumi lengthwise into 4 thin pieces and add to the pan (in batches if smaller).   

Step 4

Cook each slice for a few minutes until golden brown, then flip and cook until the other side is deep golden. Transfer to plate.  

Step 5

Put sandwiches together: Halve ciabatta loaf lengthwise and cut into 2 sandwiches. Opening the first, put avocado crema on each inside side.   

Step 6

Put spinach on the bottom bread. Put 2 slices of halloumi, 1-2 slices of tomato, a few basil leaves, extra spinach, then the top half of ciabatta on top. Repeat the other part.  

Step 7

Serving with tortilla chips and leftover avocado crema is great. (And a drink if you want.)
