Air Fryer Breakfast Burritos Recipe

Breakfast with bacon and eggs The air fryer cooks burritos until they are golden and crispy!

INGREDIENT

For the burritos: – 12 strips turkey bacon – 1 medium yellow onion, chopped – 12 egg – 1/3 cup milk – ½ teaspoon salt – 1/4 teaspoon smoked paprika (optional) – 2 Tablespoons butter – 2 avocados, chopped – 2 tomatoes, topped – 1 ½ cups Mexican blend cheese – 6 10 inch burrito style tortilla For the dipping sauce: – ¼ cup sour cream – ¼ cup mayo – Juice of 1 lemon – 2 Tablespoons basil – Salt

INSTRUCTION

Cook bacon crispy in a large skillet over medium heat. Lay bacon on paper towel-lined plate. Cool bacon and slice. Add chopped onion after removing all but 1 tablespoon bacon oil.

Step 1

Sauté onions 5-7 minutes until transparent. Meanwhile, mix eggs, milk, salt, and paprika. Medium-low heat butter in pan. Add eggs and whisk until glossy and soft-set.

Step 2

Transfer to plate. Spread bacon, onion, eggs, cheese, tomato, and avocado* on 8 tortilla shells, leaving 1.5 inches on top and bottom.

Step 3

After folding the bottom and top, roll the burrito over the filling. Lower seam. Repeat with remaining burritos.

Step 4

Air-cook 2-4 seam-side-down burritos for 5 minutes at 390 degrees. Turn and fry 3-5 minutes until crispy. Make sauce, chill till serving.
